Carrying with them their authentic Sicilian roots and years of refined training in New York and Europe, Giovanni and Katia chose the shores of St. John to build their shared dream. When the historic Papaya Café closed its doors at The Marketplace, they transformed the space into a true sensory experience, a place where their two passions live in perfect harmony.
IN THE KITCHEN
Chef Giovanni brings the passion and discipline of his three-Michelin-star training to every batch of handcrafted gelato. Using authentic imported Italian ingredients and fresh local fruit, he creates exceptional gelato, gelato cakes, gelato cannoli, and artisanal popsicles. Mornings begin with buttery French croissants and premium breakfast sandwiches made with organic eggs and gourmet Italian charcuterie.
